This recipe for buttermilk pancakes has been in my family for years. It is incredibly easy, delicious, and healthy.

You can make it even healthier by substituting whole wheat pastry flour for white flour, or using 1/2 white flour and 1/2 whole wheat.

Instructions

Things You'll Need:

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 cup buttermilk
  • 1/8 cup vegetable oil
  • 1 egg
  1. Step 1

    Mix together the wet ingredients, then add dry and stir until smooth. If you're using whole wheat flour, it may be necessary to add a little more buttermilk - the batter should be pourable, but not runny.

  2. Step 2

    Pour about 1/4 cup batter on a medium hot, buttered griddle or frying pan.

  3. Step 3

    Watch the top of the pancake for clues about when to flip. Soon a few bubbles will start appearing. When bubbles are spread relatively evenly across the top of the pancake, flip it over to cook the other side.

  4. Step 4

    When the pancake is cooked through, flip it out onto a plate. Serve hot with real maple syrup or fruit.

  5. Step 5

    This recipe makes about 10 small pancakes.

Tips & Warnings
  • For a special treat, add blueberries, raspberries, chocolate chips, or other extras to the batter, or add them on top after pouring the batter onto the griddle (kids love smiley faces!)
  • If you have young children, delight them with pancakes in special shapes (Mickey Mouse is easy, try hearts for a challenge)
  • This recipe also makes a great waffle, with no modifications, but may not be fluffy enough for Belgians (I've never tried)
  • It make take a couple pancakes to get the heat exactly right on the griddle. Don't get discouraged if your first pancakes come out slightly under- or overcooked.

on 1/8/2009 These sound good and easy to make. I've always used plain old pancake mix from the store but I might have to give these a try!
