How to Make Chocolate Almond Protein Waffles

These waffles are simple to make ahead of time and keep in your freezer for a healthy breakfast on hectic mornings. This recipe makes about 19 waffles for me.

Instructions

Things You'll Need:

  • waffle iron
  • 1 1/2 cups old fashioned oats
  • 1 1/2 cups whole wheat flour
  • 1 small handful almonds
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 2 cups milk
  • 1/2 cup water
  • 1 egg
  • 1 splash lemon juice
  • 1/2 cup applesauce
  • 1 scoop chocolate protein powder
  • 1/2 tsp. almond extract
  1. Step 1

    Preheat your waffle iron at this time. If you don't have a waffle iron, you can use this recipe to make pancakes but you may want to add some additional water or milk to thin the batter out a bit.

  2. Step 2

    Use a food processor, blender, or magic bullet to grind your oats until they resemble a coarse flour. Empty flour into a large bowl and then grind your almonds as well. Add them to the bowl at this time.

  3. Step 3

    Add whole wheat flour, baking soda and baking powder to your oats and almond mixture. Stir together and then make a well in the center of the dry ingredients.

  4. Step 4

    Pour milk, water, a splash of lemon juice, egg, and applesauce into the dry ingredients and stir until the mixture is uniform in appearance.

  5. Step 5

    Add protein powder and almond extract at this time and mix just until combined.

  6. Step 6

    Pour the batter onto your waffle iron following the manufacturer's directions. I use about 1/4 cup batter for each waffle on mine. Cook until done and then remove to a paper towel and allow them to cool while laying flat.

  7. Step 7

    Once your waffles are cool, you can stack them in a large freezer bag and freeze them until you're ready to eat. Simply reheat them in the toaster just as you would store bought frozen waffles.

Tips & Warnings
  • Let them cool before you freeze them or else the waffles will stick together and may be difficult to seperate.
