Step 1
Talk to him about the last thing he read. This will give you an indication of whether he reads as much as he says one should. Some people enjoy reading, and others do it only occasionally. If he goes on about a recent book that he really enjoyed, ask him about other books that are similar that you've enjoyed. If he hasn't read a certain book that sounds like his favorite type, give him that as a present.

Think about your dad's hobbies. An option is always to give him gifts that are themed to his favorite hobby, however, it's best to dig a bit deeper. Frame his proudest sports moment in a related theme if sports are his passion. A piece of clothing (like a cool tie) that displays his favorite sports team is always appreciated, especially if he works in an office that would allow for some fun and free expression in how he dresses. Get an autographed item if he has a favorite player on a team. You could even go the homemade route by decorating a frame with theme-related icons of his favorite hobby.

Give two gifts...one gag gift about his passion and a regular gift that's specific to the relationship that you have. The laughter alone just might be his favorite gift, especially his joy in retelling and sharing the story.

Have a portrait done of his children. A recent portrait of you and all your brothers and sisters will be a thing to treasure for years to come. Give him two framed copies...one for home and one for the office. A gift certificate to have a portrait taken of the entire family, including your dad and mom, would also be appreciated.

Give your dad a gift certificate for something the two of you can do together. Dads with grown children often complain that time isn't plentiful enough now that their children are out of the house. Include your siblings in the gift if possible so that he can spend quality time with all his kids.
