How to make Chicken, Sausage and Okra Gumbo

This is my Cajun Sausage, Chicken, and Okra gumbo recipe, and it is authentic because I am 100% Cajun.

Instructions

Things You'll Need:

  • 2-3 lbs Chicken, whole or pieces
  • 2 lbs Good Smoked Sausage
  • Large Pot ( 10-15 quarts)
  • 2 cans Okra and Tomatoes
  • 2 large onions
  • 2 large Bell Peppers
  • handful green onion tops ( chopped)
  • Rice, 4-6 cups
  • 6-8 quart pot
  • Dark Roux, 2 Cups( homemade or bottled, preferably dry)
  1. Step 1

    Fill large pot halfway with water, set on stove to boil. Cook chicken uncovered one to one and a half hours.

  2. Step 2

    Remove chicken from Pot, let cool and remove from bones, do not dispose of broth!!. While chicken is cooling chop Vegetables into small pieces.

  3. Step 3

    Add Roux to Broth in pot, stir until mixed well, and dark. Add vegetables and chicken. Bring to a boil, and let simmer. Add sausage, seasonings, and canned Okra. Allow to simmer for 2-3 hours. Add green onions just before serving if desired.

  4. Step 4

    Add 3 cups rice, and 6 cups water to smaller pot. Bring to a boil. Once it is boiling turn fire down to simmer, and add lid to pot. Cook/simmer for 15 minutes. Allow rice to "settle" for 3-4 minutes before serving.

Tips & Warnings
  • DO not cover gumbo while simmering, it WILL boil over.
  • HOT, watch kids in kitchen
