How to Make Chicken, Sausage and Okra Gumbo
Gumbo is a full-flavor Cajun dish. It takes awhile to make, but it is well worth the effort. This recipe mixes up chicken, sausage and okra for an authentic Cajun taste. Serve this over rice and add hot sauce if you want to give it added spice. You can make gumbo a few days ahead of time and reheat it. Does this Spark an idea?
Things You'll Need
- 2 to 3 pounds chicken, whole or pieces
- 2 pounds smoked sausage
- 10- to 15-quart large pot
- 2 cans okra and tomatoes
- 2 large onions
- 2 large bell peppers
- Handful of chopped green onion tops
- 4 to 6 cups rice
- 6- to 8-quart pot
- 2 cups dark Roux, homemade or bottled, preferably dry

Fill large pot halfway with water and set on stove to boil. Put the chicken in the pot and allow it to cook uncovered for one to one and a half hours.

Remove the chicken from pot and allow it to cool. Remove the chicken from the bones. Do not dispose of broth. Chop up the vegetables while the chicken is cooking.

Add Roux to broth in the pot and stir until mixed well, and dark. Add vegetables and chicken.

Put 3 cups rice and 6 cups water to smaller pot and bring it to a boil. Once it is boiling, turn down the stove to a simmer and add lid to pot. Cook/simmer for 15 minutes. Allow the rice to settle for three to four minutes before serving.

Tips & Warnings
Do not cover the gumbo while simmering, it will boil over.
