How to Make Cheesy Chili and Cream Cheese Dip

The ultimate party food on a cold day, cheesy chili and cream cheese dip is so incredibly simple and good you may you may eat it all before the guests appear.

Instructions

Things You'll Need:

  • Brick cream cheese
  • Can of chili
  • Shredded cheddar cheese
  • Tortilla chips
  1. Step 1

    If you have one of those little heated dip pots, like miniature slowcookers, this dip will work great in it. The only downside to this dip is the fact that it isn’t quite as great when it cools down, and it does cool down quickly. Just layer the stuff in the pot if you have one.

    If you don’t have one of those little pots, use a nice looking plate or platter that is microwave safe.

    Unwrap the cream cheese brick and set it on the plate. You can smooch it out with the back of a spoon, but I often just leave it like it is.

    Open the can of chili and dump it over the top of the cream cheese. Don’t worry too much about how it looks, just try to cover most of the top of the cream cheese and let it flow down the sides a little. This dish isn’t about looks so much as it is about taste.

    Top the chili coated cream cheese with shredded cheddar cheese. Throw a lot on there, the cheesier it is, the better.

    Set the whole dish into the microwave and nuke it for a minute or two. Timing will vary based on your microwave. You want the cheddar to melt a little and the chili to get heated through. Don’t cook it so long that the cream cheese gets melted.

    Serve the dip immediately with some chips or even pieces of hard bread. Since this is so popular at my parties, I usually make up a few plates and serve one while the others are set aside. That way when the first plate is almost empty I can then nuke a second plate. It does seem to go fast.

Tips & Warnings
  • Since we usually have these ingredients in our kitchens and it only takes a couple minutes to make, this is a handy dish to make up when you have unexpected guests.
  • This is the best dip ever to serve at a Superbowl Party. Make sure you have about one per guy though.
  • Buy extra cream cheese and cans of chili and have it on hand in case you need extra dip.
