How to Make a Healthy Tuna Noode Casserole

This Tuna Noodle Casserole recipe is a mom's best friend. It is super simple to make, uses healthy, natural ingredients and is always a hit with the kids.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 16 oz. macaroni or shell pasta noodles
  • 3 tbs. butter
  • 3 tbs. flour
  • 2 c. milk
  • 1 c. shredded cheddar cheese
  • 16 oz. package frozen peas and carrots
  • 2 6 oz. cans tuna
  • salt
  • lemon-pepper
  • potato chips (optional)
  1. Step 1

    Preheat your oven to 350. Start the water boiling for the noodles.

  2. Step 2

    Put the frozen peas and carrots in a microwave safe dish, add 1/4 c. water and microwave on high for about 7 minutes.

  3. Step 3

    Next, add the butter to a dutch-oven sized dish and melt over low heat. Add in the flour and keep stirring until it just starts to bubble. Add the milk. Keep stirring until it boils.

  4. Step 4

    Turn off the heat, add in the cheese and continue stirring until it is melted. Check your boiling water and add the noodles.

  5. Step 5

    Once the noodles are cooked, drain well and add to the sauce. Drain the peas and carrots and the tuna. Mix in. Season with salt and lemon-pepper to taste.

  6. Step 6

    Pour into a medium sized baking dish. Cover and bake for about 25 minutes. Sprinkle with chips, if desired, and bake for another 5 minutes. Enjoy, this is a tuna-noodle casserole you can feel good about!

Tips & Warnings
  • Tips for Weightloss: Substitute bread-crumbs for chips. Use low-fat cheese. Use fat-free milk.
