Chicken noodle soup is one of America's favorite comfort soups. These easy homemade egg noodles only take 30 minutes to make and hold up much better in soup than dried noodles. For a special meal try making your own noodles for chicken noodle soup.

Instructions

Things You'll Need:

  • 1 1/2 cups flour
  • 2 eggs
  • 2 tsp. olive oil
  • 2 tsp. water
  • 2 tsp dried dill or dried oregano
  • 2 Tablespoons Parmesan cheese
  • 1/2 tsp salt
  1. Step 1

    Place all ingredients in a food processor and mix with the dough blade for approximately 60 seconds.

  2. Step 2

    Remove the noodle dough from the food processor, lightly flour and cover with a towel, let dough rest for 15-20 minutes. Letting the dough rest will result in a more tender noodle.

  3. Step 3

    Cut the noodle dough in half and roll each half into a very thin 14" square. Trim each square.

  4. Step 4

    Lightly flour dough as needed and roll each square into a loose jelly roll shape. Cut each roll into 1/4-inch slices, and then cut pile of slices into 2-in lengths. Let noodles dry for 15 minutes and then cook in chicken soup for approximately 2 minutes.

Tips & Warnings
  • Fresh pasta dough cooks very quickly, don't overcook noodles.
  • Chicken noodle soup can be frozen.
  • Use a rotisserie chicken, frozen vegetables and canned chicken stock for a quick soup.

on 1/23/2009 Your self made noodles taste much better. A vegetarian can take apple sauce or lemon juice instead of the eggs, and a little yoghurt or fresh yoghurt cheese.
