How to Make Gluten Free Buckwheat Pancakes

If you are allergic to wheat or gluten, or have the condition known as Celiac Disease, these tender pancakes will hit the spot. They also happen to be very nutritious. Buckwheat is very high in protein and studies have shown it may be good for your heart health. Don't worry, this batter does not contain gluten, so it can not be over-beaten like regular pancake batter. Extra Batter can be stored in the refrigerator.

Instructions

Things You'll Need:

  • 1/2 cup buckwheat flour
  • 1/2 cup brown rice flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup milk
  • 1 egg
  • 2 teaspoons maple syrup, honey, or sugar
  • 1/4 teaspoon vanilla (optional)
  1. Step 1

    Combine the brown rice flour, buckwheat flour, salt, baking soda, milk, egg, sugar, and vanilla in a bowl and beat well.

  2. Step 2

    Add more milk or buckwheat flour as necessary to make a free flowing batter.

  3. Step 3

    Pour a small amount of batter onto a lightly greased nonstick skillet. The pancakes are ready to flip when the edge starts to look dry.

  4. Step 4

    Enjoy buckwheat pancakes topped with butter and maple syrup for a hearty old fashioned meal, or applesauce, jams, jellies, or honey.
