How to Make Low Fat and Healthy Chicken Alfredo

Chicken Alfredo is one of my favorite meals, but I can't stomach all of the fat and calories. This recipe is for a healthy and low-fat faux Alfredo alternative.

Instructions

Things You'll Need:

  • 12 oz. Whole Wheat Pasta
  • 1 6 oz. Chicken breast
  • 2 cups broccoli - steamed
  • 1/2 cup fat free ranch dressing
  • Italian Seasoning
  • Salt
  • Pepper
  1. Step 1

    Prepare your whole wheat pasta as per the directions on the box. The only change you should make is to cook the pasta a bit Al Dente' (under cook it a bit).

  2. Step 2

    While your pasta is boiling, sear your chicken breast on all sides. The only necessary spice here is a pinch of salt, some pepper, and garlic. Once the pasta is seared, let it rest for a few minutes so that the chicken juices can settle.

  3. Step 3

    After the chicken has rested, dice it up and cook it thoroughly. You will know when the chicken is done because you won't see any pink. While your diced chicken is cooking, steam the broccoli in a separate pot. Steaming your broccoli will help it be as healthy as possible.

  4. Step 4

    When the pasta, the chicken, and the broccoli are done, add them to the largest pot and toss them. Pour in the Ranch Dressing and mix the ingredients together. Season with Italian seasoning to taste and serve. You can sprinkle some shredded Parmesan cheese and parsley on top of the pasta for presentation.

Tips & Warnings
  • Keeping the pasta a bit underdone will allow it to soak up the ranch flavor and chicken juices.
  • By using Italian Seasoning, you can make sure that this dish has an Italian flair.
  • This recipe is less then a third of the calories and fat of traditional Chicken Alfredo. Instead of informing your family or guests that they are going to be eating fake Chicken Alfredo, simply prepare the dish and serve it. Wait until everyone loves it to let them know how healthy it is.
