How to make Glumkes ( polish stuffed cabbage)

This article is about making a polish stuffed cabbage. It is a treat in our household. This is a delicious easy to follow recipe.

Instructions

  • 3 lbs ground beef 1 small salt pork 1 Large head of cabbage 1/2 cup minute rice 1 can crushed tomatoes ( you can use whole tomatoes you just have to puree them) 2-3 slices of bacon ( I omitted th

  2. Step 2

    First I usually start with the salt pork. I cut off the meatiest looking parts of it and chop it as fine as I can. This is uncooked salt pork. I slice up about 1/2 cup of this.

    Next I prep the cabbage I clean the outside and rip off the first leaf or two. The bigger the head of cabbage the better and easier the glumkes will be. I cut around the core at the bottom as deep as I can. I make a circle around it. I then par boil it for about 8 minutes. This way it comes off easy and its much easier to work with.

    In large bowl mix ground beef , rice, salt pork, and minute rice. Make sure that this is well mixed and that the ingredients are well blended. I usually take about enough meat that fits in the palm of my hand and make a meat ball with it.

    Next I Separate the cabbage leaves keeping them as intact as possible. I place the meatball mixture in the center and roll it. I push down a little on it so that the meatball is a little flatter and fills the cabbage a bit more. I do this until all the meat is gone.

    Some people fry bacon and use the grease to fry the cabbage that is the way my mother in law taught me, however I tried it for the first time frying it in butter tonight and it was delicious. I did not notice a big difference at all. I used about 2 tbsp of land o lakes butter and placed the cabbages in the frying pan. Not all would fit so I had to do a couple batches. You fry them for a few minutes on each side on
    medium-low heat .

    While the glumkes fry you can open the can of crushed tomatoes and put a thin layer of tomatoes on the bottom of the plan you will be baking them in. Once the glumkes have fried place them into this pan. Once all are in the pan place the rest of the crushed tomatoes over it. I also put the leftover juice from frying the glumkes into the baking pan.

    Cover them with Aluminum foil and bake for 2 hours on low. You can cook these on low heat in a pot on the stove , but for me it is so much easier to bake and just as flavorful. I do not have time to constantly watch them and move them around with my hectic schedule.
    A traditional Polish meal like this would have mashed potatoes as a side.

    Also you can boil up the remaining cabbage and chop it fine add cream of mushroom soup. I do not care for that but my husband loves it.

Tips & Warnings
  • You can simmer these on the stove top but baking is the easiest way.
