How to Keep Cut Chives Fresh
Fresh cut chives impart a soft onion flavor to many dishes like mashed potatoes or omelets. Chives that may be older can lose flavor and even become bitter or flavorless if they are not taken care of properly. Chives that are purchased at your local market and left in the fridge usually have a three to seven day life span. If care is taken, fresh cut chives can last up to a couple of weeks or longer. Purchase fresh cut chives from your local market that are bright green and don't have any yellow or brown stalks included in the package. The browning stalks will encourage a fast decaying process.

Remove the herbs from the plastic package. Rinse with cool water. Hot or warm water may wilt the chives.

Lay the wet chives on a paper towel. Wrap the chives in the paper towel.

Place the paper towel package in a plastic bag and seal. Place in the vegetable drawer.

Check on the moistness of the paper towel each day. Add a sprinkle of water if needed. This method will extend the life of the fresh cut chives for a week to two weeks.

Make sure your fridge temperature is set to 38 to 41 degrees. Warm temperatures encourage decay.
