How to make Fresh Ambrosia Fruit Salad

This is a great fresh fruit salad that is good in winter or summer. It can be expanded easily to feed more people.

Difficulty: Easy
Instructions

Things You'll Need:

  • Oranges or clementines
  • Pineapple
  • Grapes
  • Banana
  • Pomegranate
  • flaked coconut
  • whipping cream
  • 1 Tbs powdered sugar
  • sour cream
  1. Step 1

    Peel 4 or 5 oranges or clementines. Add 2 cups fresh or canned pineapple chunks. Slice a banana or 2 and drizzle lemon juice on them to keep them from browning. Add to the mix. Add in pomegranate seeds Add in grapes (grapes can be cut in half if desired).

  2. Step 2

    Sprinkle in 1/2 cup shredded or flaked coconut. Mix lightly. Add 1/2 cup whipped cream sweetened with 1 tablespoon powdered sugar. Add 1/4 cup sour cream. Sour cream can be low fat if desired or plain yogurt.

  3. Step 3

    Mix lightly. Chill. Makes about 6 servings. Mini marshmallows are optional but kids love them in the mix.

  4. Step 4

    The thing I like about this is other fruit can be added like apples or blueberries or blackberries or kiwi. More or less of any of the fruit can be in the mix depending on what you have on hand.

on 1/28/2009 Oh, yum - I used to make this when my kids were little. A good substitute for sour cream is plain lowfat yogurt, if you like. Thanks for bringing back some memories =D
