Things You'll Need:
- 1 box of devil's food mix, oil, eggs, and water. 2 8 oz packages cream cheese softened, sugar, 1 more egg. The typical baking stuff(bowls, spoons, measuring cups), cupcake trays and liners.
-
Step 1
First and foremost, preheat your oven to 350 or whatever it is your box calls for. That way there will be no waiting once your delicious cupcakes are ready to be baked.
-
Step 2
I like to line my cupcake trays and set them aside first, so when the batter is done you can just go ahead and spoon it in. Go ahead and line all 24 cupcake "slots" on your trays.
-
Step 3
Next, you'll need to make the cheesecake batter. First you need to soften the cream cheese if you haven't already. If you want to quickly soften the cream cheese, leave it out at room temperature for a bit while you get them ready and then pop it in a microwavable bowl and zap it for 15-30 seconds on high, depending on your microwave. If you get it really soft and are mixing by hand(as I've had to sometimes), this part will be deliciously creamy(even better than with a mixer).
-
Step 4
Take your soft cream cheese and plop it into a bowl. Now you'll want to add the sugar. Typically you'd want a cup, I sometimes do 3/4 cup. It just depends on your taste. Mix it up.
-
Step 5
Now add an egg to your cheesecake mix until just blended.
-
Step 6
Next, you'll add in some semi-sweet chocolate chips. You don't want to overpower the cheesecake part with chocolate, but put in a 1/2 cup or less as desired. Stir them in with a big spoon. Set aside your cheesecake mix, you can put it in the refrigerator if desired.
-
Step 7
Now you'll make the devil's food cake. First just follow the directions on the box, the amount of ingredients will be determined by that. It should be something like blending the cake mix, water, oil, and eggs in a large bowl until moistened. You can then mix it on medium speed for 2 minutes or whisk it by hand for 2 minutes. Again, the amount you need will be on the box, but just in case, my Pillsbury box calls for 1 1/4 cups water, 1/2 cup of oil, and 3 eggs. Remember, you can always substitute butter for the oil(I do!).
-
Step 8
Now your cake mix is nice and moistened. Throw in some chips just like you did with the cheesecake batter. I wouldn't do much more than a 1/2 cup, but again it's up to you! Mix it up with a big spoon and we're ready to bake!
-
Step 9
Filling up the cupcake trays can get messy. You need to fill them up about half way to 2/3. My suggestion is to kind of hover the bowl over the trays and spoon the devil's food batter right in to avoid a huge mess. You may still have some spilling, but that's alright.
-
Step 10
Once you have the devil's food in the trays, it's time for cheesecake! Spoon the cheesecake onto the top of the devil's food batter. Depending on how creamy it is, it might just stay in a ball in the middle and sink or spread around. Don't worry if it seems a little liquidy, that's happened to me and they actually come out even better that way!
-
Step 11
Now you're ready to bake! Pop them in the oven at 350 or whatever you box says, and you'll want to make the time closest to the highest time on your box. For example, if it says 18 to 22 minutes, you'll probably leave it in for 22 minutes. It depends on your oven, so check them when it's close to the low time and leave them in until they're starting to get brownish on the top.
-
Step 12
Remove them from the oven. Let them cool for a bit. If you'd like, eating one warm is just delicious. Otherwise, cool them completely. Now you can either serve them as they are(trust me, they're a hit) or top them with vanilla or cream cheese. The great thing about these is they don't even need frosting and the presentation or taste isn't missing anything without it. Enjoy!
