Sweet yellow corn muffins are a type of cornbread that is sweeter than a typical southern cornbread. Some food purists insist that the only true southern cornbread is made with white cornmeal and cooked in an iron skillet. However, many different types of cornbread are eaten in the South.

Sweet Yellow Corn Muffins are usually eaten with hot and spicy dishes. This recipe makes six muffins. It can easily be doubled.If you like,you can leave the sugar out.

Instructions

Things You'll Need:

  • 2/3 cup all purpose flour
  • 1/2 cup yellow corn meal
  • 1 Tbsp granulated sugar
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp vegetable oil or melted butter
  • 1 large egg
  • 1/3 cup milk
  1. Step 1

    Preheat oven to 400F.

  2. Step 2

    In a mixing bowl combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk.

  3. Step 3

    Whisk in vegetable oil or melted butter and mix until dry mixture is smooth and lumps are gone.

  4. Step 4

    Add egg and milk to the above mixture. Mix well.

  5. Step 5

    Spray muffin tin with non-stick spray or line with muffin papers. Fill muffin tins 1/2-2/3 full(depending on size).

  6. Step 6

    Bake 15-20 minutes or until a toothpick inserted into one of the muffins comes out clean.

Tips & Warnings
  • If you would like even sweeter muffins you can increase the sugar to 2 or 3 tablespoons. Any more than that and the muffins will be like a dessert bread rather than a corn muffin.
  • You can use white cornmeal if you prefer it.
  • A cornmeal mix can be used instead of mixing the flour and cornmeal yourself. You won't need the baking powder or salt if you use a mix.
