Many families, especially small families, will substitute a small hen, lobster or cornish hen for turkey during holiday meals even though it is a big tradition to serve turkey at Thanksgiving and Christmas dinners. Families steer away from turkey because there is always so much meat leftover. However, there are several dishes that one can create with leftover turkey. Practically any dish made with chicken can also be made with turkey by simply substituting the chicken for turkey. Does this Spark an idea?

Things You'll Need

  • Cooked Turkey
  • Salt
  • Pepper
  • Basil
  • Lettuce
  • Brown mustard
  • Eggs
  • Whole wheat bread
  • Celery
  • Cucumber
  • Onions
  • Flour

Instructions

    • 1

      Make turkey sandwiches. Take slices of turkey, garnish it with brown mustard and lettuce (or condiments of choice) and serve on wheat bread.

      Prepare chopped turkey patties. Finely chop turkey meat and mix with egg, parsley, flour, salt and pepper (to taste). Shape mixture into 2-inch thick patties and broil for 8 minutes on each side.

      Make turkey salad. Combine chopped turkey, celery, cucumber, onions, and basil. Top with salad dressing of choice or serve in mini filo shells.
