How to Make Holiday Leftover Stew

What did you have for the holiday? Turkey? Ham? Roast prime rib? Have a lot left over? Stew it! And make it great all over again.

Instructions

Things You'll Need:

  • Besides the leftover meat, carrots, potatos, celery, onions, garlic, green beans (frozen/fresh) pea's.
  1. Step 1

    Of all the items in "things you will need" onions/carrots/celery chop to desired size one cup each, a cup of chopped bite size) green beans and a half cup frozen peas, two cloves of garlic pressed. Potatoes (one per person) cut to bite size. All this will go in with 4 to 6 16oz cans of broth (chicken/beef) depending on which meat. If turkey I stay with chicken broth, sometimes you can find turkey broth in the market Collage Inn does make it. Cut up the leftover rib-roast to bite size chunks and save the bones and some fat.

  2. Step 2

    Every year we make a rib roast (see my article on this) So if other meat skip the searing. In a 6 quart soup metal (not non stick) pot heat one teaspoon lite oil, sear the left over bones (ribs) and a small amount of fat from the roast, add a small amount of red wine to "deglaze" the pot, add one or two cans of beef broth (cover ribs), let it get hot and set to simmer on a very low heat for 1 hour.

  3. Step 3

    After one hour remove the bones (pick off any meat) add the rest of the broth and veggies and garlic, salt & pepper to taste perhaps a little thyme leaves (make sure all the veggies are covered or else add more beef broth) and raze the heat to high. Make a thickener, a combination of flour & corn starch (I use 2 tblspn flour to 1 tblspn corn starch) to make 1/2 cup powder and add 1/2 cup cold water, let stand to room temp. Once the soup has reached almost boiling reduce heat to low or simmer and cook until the veggies are done. (1 to 2 hours)

  4. Step 4

    Bring up the heat to a little more then simmer, you dont want it to boil and Add the thickener a little at a time until you have the thickness you like, I like it only slightly thick, add some gravy master if color is needed, this also adds flavor. Now turn off the heat add the meat (remember the meat is already cooked) and let stand 5 minutes and serve with freshly baked biscuits or Italian bread.

Tips & Warnings
  • Searing, you can skip this part if using turkey and do not cook the bones, if ham or pork roast you can sear the fat or a few peaces of ham but use white wine to deglaze and chicken broth for the stock.
  • Use your imagination, add or subtract what ever you like to this to your own taste.
