Spaetzle, a German pasta or dumpling, is a wonderful treat that is most easily made using a spaetzle maker. Other methods include pressing the dough through a colander or cutting strips of dough into boiling water. Once you've used the spaetzle maker though you'll never go back!

Purchase a spaetzle maker if you don't already have one. They're available online. You can try to find them in brick and mortar stores, but it is a real hit-or-miss proposition. The most common variety of pasta maker looks like a grater with a sliding rectangular cup attached.

Heat 4 quarts of water and 1 teaspoon salt to boiling. While waiting on the water, beat the flour, water, eggs, and salt until smooth.

Reduce heat to medium. Set the spaetzle maker across the top of the pan. Fill the rectangular cup with dough. Begin sliding the cup back and forth above the boiling water. Stir gently so the spaetzle doesn't stick together. The spaetzle is done when it floats to the top. Scoop out the spaetzle and drain in a colander. Repeat the process until you've used all the dough.
