How to Make Pomegranate Bellinis for Any Party

You can substitute a dry cava for the champagne if you like.

A Bellini is, traditionally, a peach-flavored champagne cocktail, but this pomegranate variation is an easy and elegant addition to any holiday celebration.

Things You'll Need

• Champagne flutes
• 1 bottle dry Champagne
• Pomegranate juice
• Lemonade
• Ripe pomegranate seeds

Instructions

1. Add a teaspoon of pomegranate seeds to each champagne flute. Pomegranate seeds can often be found already removed from the fruit, or you can remove them from a ripe pomegranate by hand.

2. Fill each champagne flute halfway with dry champagne. Remember to pour slowly and hold the glass almost horizontally while you pour so that it does not overflow.

3. Fill most of the rest of each glass with pomegranate juice, then add a splash of lemonade. If you can find a pomegranate-flavored lemonade to use instead, that's fine.

Tips & Warnings

• You can also add the pomegranate seeds after you've poured the liquids; initially they will sink to the bottom of the flute, then rise to the top creating a nice float.

• If you prefer this recipe without the pomegranate seeds, or if they aren't in season, it's still great without them; they're just for garnish.
