Things You'll Need:
- Whole wheat bread
- Boneless chicken breast
- Onion
- Salad dressing
- Lemon pepper
- Salt
- Equal/Splenda
- Food chopper
- Tomatoes
- Lettuce

Step 1
First thing is to boil about 2 pounds of boneless chicken breast until done. You may add salt, pepper and onions to the water as the meat is cooking to enhance the flavor.

Drain the water off the chicken and dice the meat to the consistency that you like. Be careful to check for chunks of chicken that may not have been diced.

Add the seasonings: salt, pepper, Splenda or Equal, and lemon pepper. Stir into the meat so that it may start enhancing the taste.

Chop up the onions and add them to the mixture. Stir all the ingredients together very well.

Add the light mayonnaise until you have the consistency that you like. Again, be sure to stir all the way to the bottom of the bowl to mix all of the ingredients together.

Step 6
If you prefer, toast your whole wheat bread. Add mayonnaise to the bread. Place the lettuce on one side and cover with the amount of chicken salad you desire. Add the tomato and put the last piece of bread on the sandwich. Cut in half and enjoy!!!
