How to Bake a Blueberry Coffee Cake

Instructions

Things You'll Need:

  • (For the Cake)
  • 1-1/2 cups fresh or frozen blueberries
  • 2 large eggs
  • 1/3 cup butter, softened
  • 3/4 cup sugar (for the batter)
  • 1 teaspoon vanilla extract
  • 1 tablespoon sour cream
  • 1 tablespoon cocoa powder
  • 1/3 cup whole milk
  • 4 tablespoons coffee creamer (plain; original, no added flavor)
  • 1/2 cup strong brewed coffee
  • 2-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 tablespoons sugar (for the layer)
  • (For the Topping)
  • 4 teaspoons confectioners' sugar
  1. Step 1

    Beat the butter, cocoa and sugar until crumbly in a large bowl, about 3 minutes.

  2. Step 2

    Add in the egg, milk, vanilla to the above cake mixture. Mix well.

  3. Step 3

    Combine the coffee, creamer, baking powder, flour and salt, then add to the cake mixture made in previous steps. Slowly add in the sour cream. Stir well. Now, fold in the blueberries. Preheat oven to 350 degrees F.

  4. Step 4

    Combine cinnamon and sugar in a mixing bowl. Let set.

  5. Step 5

    Lightly coat a fluted tube baking pan with cooking spray, dust with a layer of flour. Spoon half of the batter into the pan. Lay half of the cinnamon-sugar mix over batter. Repeat layers until you use up all the batter and the cinnam0n-sugar mixture.

  6. Step 6

    Bake at 350 degrees F for 45-52 minutes, or until a toothpick inserted near the center comes out clean. Cool for 15 minutes on the wire rack before removing the cake from the pan.

    Remove cake from the pan. Dust the top with confectioners' sugar. Yields approximately 12 servings.

Most of us can have various ways in cooking healthy but delicious desserts as long as to keep close eye on the ingredients and recipe preparation.
