This is a very simple recipe and quick to do. Prep time is about 15 minutes and total time is about 35 minutes.

Instructions

Things You'll Need:

  • 1 lb. ground beef
  • 1 jar of Thick 'N Chunky Salsa
  • 1 1/2 cups of Mexican style finely shredded cheese
  • 1 (12 1/2 oz.) package of flour tortillas
  1. Step 1

    Heat your oven to 350 degrees F.

  2. Step 2

    Brown the ground beef in a large skillet. After it is been browned, drain it. After it is drained, stir in 1/2 cup of the salsa and 1 cup of the cheese.

  3. Step 3

    Spread out 1 cup of the salsa onto the botton of a 13 by 9 inch baking dish. Put 1/4 cup of the meat with salsa and cheese (mixture) down the center of each flour tortilla. Then roll it up.

  4. Step 4

    Place the flour tortilla with the meat, cheese and salsa mixture in the baking dish with the seam side down. Add the remaining salsa and the cheese to the top of the tortillas.

  5. Step 5

    Bake the enchiladas for 20 minutes or until they are hot all the way through.

Tips & Warnings
  • You can add shredded lettuce, diced tomatoes and sour cream if you want.

on 1/6/2009 In Mexico they have a saying, "¡Estas no son enchiladas!" It literally means "These here aren't enchiladas!" which is an expression like "it's no walk in the park", alluding to the simplicity of making this food. Enchiladas are dead simple, and good, nutritious food. Check out my article on tamales!
