Things You'll Need:

  • 4 medium sweet potatoes, cooked
  • 2 TBSP frozen orange juice concentrate, thawed
  • 3 TBSP Cointreau or Triple Sec
  • 1 tsp vanilla
  • ½ tsp salt
  • 2 eggs, slightly beaten
  • Topping:
  • ½ cup packed brown sugar
  • 2 TBSP flour
  • 2 TBSP cold butter
  • ¼ tsp cinnamon
  • ¼ cup chopped pecans
  • ¼ – ½ cup coconut
  1. Step 1

    Step one in making your Sweet Potatoes with this recipe is to put sweet potatoes (unpeeled) in a large pan, almost but not quite, covered with water.

  2. Step 2

    Step two in cooking your Sweet Potatoes with easy recipes like this one, is to bring to a boil and cook until potatoes are fork tender. When done, remove from water to a cutting board and peel. The peeling will just pull off easily.

  3. Step 3

    Put in a bowl and beat with a mixer or a fork until smooth. Add the o j concentrate, the Cointreau or Triple Sec, the vanilla, the salt, and the eggs.

  4. Step 4

    Spray Pam in a casserole dish and put the mixture in the prepared dish. Mix the topping ingredients together and sprinkle on top of the sweet potatoes.

  5. Step 5

    The final step to make Sweet Potatoes with this recipe is to bake @ 350* for 35 – 40 minutes. If made ahead and refrigerated, bake for 45-50 minutes.
