If you love chocolate like I do, you will be amazed by this easy and delicious chocolate truffle recipe. Treat yourself to these decadent confections, or package them attractively for inexpensive, yet elegant, gifts.

Instructions

Things You'll Need:

  • 2 packages of bittersweet baking chocolate (Baker's brand recommended)
  • 1 8-ounce package of cream cheese (regular or lowfat)
  • Colored sugar, chocolate sprinkles or chopped nuts for garnish
  1. Step 1

    Bring cream cheese to room temperature. Beat cream cheese with mixer until creamy. Melt eight bittersweet chocolate squares and blend into the whipped cream cheese. Refrigerate chocolate-cream cheese mixture for about a half hour or until firm.

    Shape chocolate-cream cheese mixture into balls (about 36). Place on parchment or waxed paper-lined baking sheet.

  3. Step 3

    Melt remaining chocolate over double-boiler or in microwave. Use fork to dip truffles. Return to baking sheet. Top with colored sugar, chocolate sprinkles or chopped nuts for garnish. Refrigerate for 1 hour.

    Optional: Line a plain candy box (can be purchased at a cooking supply store) with paper or foil cup cake liners. Place chocolate truffles inside liners. Wrap candy box with a pretty ribbon, and you have a beautiful and tasty gift.

Tips & Warnings
  • Bittersweet chocolate may be substituted with semi-sweet chocolate for a sweeter truffle.
  • Store chocolate truffles in refrigerator. Truffles may be eaten chilled or at room temperature.
