How to Make A Farmer's Casserole

This Farmer's Casserole is great to serve Christmas morning. After opening presents no one wants to stand over a hot stove and cook all morning. Make this the night before and then just pop it into the oven. I serve this with a muffin & cut up fruits such as strawberries, pineapple, watermelon, & honeydew melon for a complete meal. This is sure to become a family favorite.

Instructions

Things You'll Need:

  • 6 cups frozen hash brown potatoes
  • 1 1/2 cup Extra Sharp Cheddar Cheese, shredded
  • 2 cup diced cooked ham
  • 1/2 cup sliced green onions
  • 8 eggs, beaten
  • 3 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • nonstick cooking spray
  • mixing bowl
  • alumin foil
  • 3 quart baking dish
  1. Step 1

    Coat baking dish with non-stick cooking spray. Arrange frozen hash brown potatoes evenly in the bottom of the baking dish. Next sprinkle with shredded extra sharp cheddar cheese, ham and sliced green onions.

  2. Step 2

    In a mixing bowl combine beaten eggs, milk, salt and pepper. Whisk together. Next pour egg mixture over potato mixture.

  3. Step 3

    Bake at 350 degrees for 50 to 55 minutes. Insert a knife in the middle of the dish if it comes out clean the dish is done.

  4. Step 4

    To make this dish ahead. Cover and chill for up to 1 day. Bake for 1 hour to 1 hour and 5 minutes.

Tips & Warnings
  • If you like it spicy then us Monterey jack cheese with jalapeno peppers instead of the cheddar cheese.
  • This dish is not only for breakfast. I also serve this for dinner.
  • In place of the ham you could add sausage or bacon
