After the holidays we all have lots of leftovers. However, finding ways to reinvent leftover can be challenging. I remember my Mom making Ham Loaf with the left over ham. She served the ham loaf with fried apples and macaroni & cheese. Yum. This recipe is so simple and your family will ask you to make this again. This recipe doubles easily. Enjoy!

Instructions

Things You'll Need:

  • 2 eggs, beaten
  • 3/4 cup milk
  • 2 cups soft bread crumbs
  • 1/4 cup onion, chopped finely
  • 1 tablespoon parsley flakes
  • 1/2 teaspoon dry mustard
  • 1/8 teaspoon black pepper
  • 12 ounces ground pork
  • 12 ounces ground cooked ham
  • 1/4 cup catsup
  • 2 tablespoons brown sugar
  • 1 teaspoon dry mustard
  • Mixing bowls
  • Loaf Pan
  • parchment paper
  • food processor
  • blender
  1. Step 1

    Make your own soft bread crumb. Place a slice of bread into a blender or food processor. 3 slices of bread will yield about 2 cups of soft bread crumbs.

  2. Step 2

    In a bowl combine eggs and milk. Stir in bread crumbs, onions, parsley, dry mustard and black pepper. Add meat and mix well. Cut parchment paper to fit the bottom of loaf pan. Put mixture into a 8 inch loaf pan.

  3. Step 3

    Bake for 350 degree for 1 hour to 1 hour & 15 minutes. Spoon off fat.

  4. Step 4

    In a small bowl mix catsup, sugar and mustard. spread over hamloaf and bake for 10 more minutes. Let stand for 10 minutes before serving.

Tips & Warnings
  • You can use ground beef in place of the ground pork.
