Chicken potpie is a comfort food that's easy to make and nothing is healthier or tastier than home made. This recipe makes use of your leftovers.

Instructions

Things You'll Need:

  • Chicken
  • Carrots
  • Green beans
  • Onion
  • Potato
  • Sour cream
  • Chicken broth
  • Salt and pepper to taste
  • 1/2-cup flour
  • 1/2-cup milk
  • One tsp baking powder
  1. Step 1

    Dice your chicken and vegetables and place in a saucepan. Ingredients should be diced small enough so that you get a bit of each in every bite. Add enough chicken broth to cover, and salt and pepper to taste. Reduce over medium heat until vegetables are tender.

  2. Step 2

    Mix flour and baking powder, and then add milk to make crust. It should be about as thick as pancake batter.

  3. Step 3

    Spoon the chicken potpie filling into small casserole dishes. You may also use ramekins or small pie pans. If you like sour cream in your potpie filling, now is the time to mix a spoon full into each dish.

  4. Step 4

    Pour the batter over the filling until the filling is completely covered, and cook in a 350 degree Fahrenheit oven until the crust is golden brown, about 30 minutes.

Tips & Warnings
  • If you prefer tradition piecrust, bake the bottom crust before adding the chicken potpie filling and top crust.
  • If you are using a mixture of cooked and raw vegetables, add the raw vegetables first, making sure they are tender before adding the rest of the vegetables.
