Candy sweet potatoes for holidays

Instructions

Things You'll Need:

  • Sweet potatoes or yams
  • Butter
  • Brown sugar
  • Large pan with lid
  • Knife
  • Casserole baking dish
  • Water
  1. Step 1

    Wash and peel sweet potatoes with a sharp knife. Cut each potato into slices about 2 inches thick. Rinse again and place into a medium sized pan with enough water to cover. Bring to a boil and turn down heat to a low boil. Cook just till tender, do not overcook.

  2. Step 2

    Drain the boiling water from the potatoes and place the now tender slices into a round or rectangle baking dish, or pan which has been buttered or sprayed with cooking spray on the bottom. Lay the potatoes close to each other and cover the entire bottom of the dish.

  3. Step 3

    After all the slices are in place, spread soft butter or margarine over the entire top of each slice. A light coating will do. Now sprinkle on top of the buttered slices light brown sugar till well coated, this can fall between the slices also for a nice syrupy liquid after baking time has ended. Cover and bake in a preheated 350 degree oven for 35-40 minutes. Uncover and bake about 5 more minutes to crisp the top a little.

Tips & Warnings
  • Marshmallows can be added to the top prior to the last few minutes of open top baking. Be sure to check often so marshmallows don't scorch.
  • Remember that sugar melts and gets very hot to touch. Wear adequate oven mits, and let sit a few minutes before dishing out the servings. These can be reheated easily in the microwave, again be careful of the hot sugar syrup baking created.
