Broccoli is a delicious and versatile vegetable to complement any main dish. It is healthy and quick cooking. Here is a recipe for microwave cooked broccoli that I love. Enjoy!

Instructions

Things You'll Need:

  • Whole head of un-cooked broccoli
  • Fresh squeezed lemon juice
  • Lemon zest (optional)
  • Fresh minced garlic
  • Lemon olive oil
  • Large microwave safe bowl
  • Microwave
  1. Step 1

    Break the broccoli stems off and trim them so they are no longer than three inches. Remove any brown spots and rinse.

  2. Step 2

    Place the broccoli florets in a large microwave safe bowl. Add to it 1 teaspoon minced garlic, 1 tablespoon lemon olive oil, 1 tablespoon water, and 2 teaspoons lemon zest (optional). Toss all ingredients to combine.

  3. Step 3

    Cover the bowl with plastic wrap and microwave on high for 4 to 5 minutes. Check for tenderness and microwave for one more minute if needed.

  4. Step 4

    Place the broccoli in a decorative bowl and sprinkle with lemon juice. Toss and season to taste with salt and pepper. This is excellently paired with citrus fish or chicken, or even to serve along side hamburgers at a picnic. Enjoy!
