Make an Easy Vegetarian Gumbo

Sometimes you would like a good, but quick and easy gumbo. Here is an easy vegetarian gumbo, tastes just like authentic Louisiana gumbo.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • olive oil
  • garlic
  • diced tomatos
  • kidney beans
  • cajun spice
  • rice
  • okra
  • red pepper
  • vegaterian susage
  1. Step 1

    The first step is to heat two table spoons of extra virgin olive oil in a large pot over medium heat. Then add two cloves of garlic, peeled and sliced and then suate it for about 30 seconds. Next slice one red pepper, add to the pot and cook for about 4 minutes. Watch as not took overcook the peppers.

  2. Step 2

    Add one-28 oz. can of diced tomato and one-15 oz can of red kidney beans, drained, also add cajan spice to taste and 1/2 pound of sausage( any type or sea food if desired). Reduce heat, cover and simmer the pot for approximately 15 minutes.

  3. Step 3

    Next add rice and okra and cook until rice is cooked, but not sticky. Serve hot sauce if desired. Enjoy the vegetarian gumbo!!!

Tips & Warnings
  • You can substitute for any type of sausage or sea food as you like and use whole grain brown rice if desired. You can also vary cajan spices as you like, you can make this mild or hot, as you like.
