When looking for dessert ideas, consider pear amaretto ice cream. The combination of pear with amaretto creates a sweet and spicy flavor with hints of almond. Amaretto, an almond-flavored liquor, gives the ice cream the almond flavoring. Pears, a source of vitamin C and fiber, add the sweet taste. The level of sweetness of the ice cream depends upon the type of pear selected. Bosc pears are recommended for amaretto ice cream because of their distinct sweet flavor. Pear amaretto ice cream compliments most types of cake. It is also filling enough to be served alone.

Difficulty: Easy
Instructions

Things You'll Need:

  • 3 cups of Bosc pears (sliced, cored and skinned) 1 tbsp. of lemon juice (fresh or concentrate) 1 cup of pear juice (fresh or concentrate) 6 egg yolks from large eggs 2 cups of heavy cream 3/4 cup of granulated sugar 3 tbsp. of amaretto 1/2 cup of corn syrup (regular or light) 1/3 cup of chopped almonds (optional) Cinnamon (optional)
  1. Step 1

Mix the Bosc pears, lemon juice and pear juice together in a large saucepan. Heat the ingredients slowly over medium heat until they boil. Stir as needed.

  2. Step 2

Remove the pear mixture from the stove and pour it into a blender. Blend the pears until smooth. Put the pears in the refrigerator for 30 minutes or until cold. Set aside.

  3. Step 3

Combine the corn syrup, egg yolks and sugar in a large bowl. Use a whisk to mix the ingredients until blended.

  4. Step 4

Warm up 1 cup of heavy cream in a small saucepan until it simmers. Remove the cream from the heat and gradually stir it into the egg yolk and corn syrup mixture.

  5. Step 5

Put the batter in a large saucepan and carefully stir the mixture over low heat for about 6 minutes or until it thickens. Do not let the ingredients boil.

  6. Step 6

Pour the ingredients into a bowl through a strainer. Stir in the second cup of heavy cream. Chill the batter in the refrigerator for 30 minutes.

  7. Step 7

Add the amaretto, almonds and pear mixture to the cold batter. Stir until the ingredients are well-blended.

  8. Step 8

Pour the pear and amaretto batter into an ice cream maker. Follow the ice cream maker manufacturer's instructions to process the ice cream.

  9. Step 9

Serve the ice cream as desired. Sprinkle cinnamon on each serving for a spicier flavor.

Tips & Warnings
  • Sprinkle cinnamon on each serving for a spicier flavor. Top the ice cream with a dab of caramel instead of cinnamon for a sweeter flavor. Substitute the heavy cream with 1½ cups of evaporated milk for a healthier alternative. Let the ice cream freeze for 4 or 5 hours before serving to develop a richer flavor and a thicker texture.
