Instructions

  1. Cleaning

    • 1

Spread the newspaper over the surface on which you are planning to clean the fish. Doing this task outside makes clean-up easier.

    • 2

Hold the fish firmly with one hand while holding the knife in the other hand.

    • 3

Run the knife across the fish from tail to head to remove the scales. Turn the fish over and repeat on the other side until all the scales are gone.

    • 4

Find the anal section (usually behind the lower fin, just above the tail). Make a small cut and remove the anal section.

    • 5

Cut the head off just under the gills.

    • 6

Lay the knife sideways and cut a slit along the underbelly of the fish. Remove the guts of the fish.

    • 7

Wash the fish thoroughly, both inside and out.

    Cooking

    • 8

Place 1/2 cup cornmeal in bowl and set it aside.

    • 9
