Things You'll Need:
- 1 cup black beans
- 1 cup chopped red onion (large)
- 1.5 cups kernels of corn (fresh or 10 oz. frozen will work)
- 1 tbsp. olive oil
- 1/2 jalapeno, minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 cup pear/grape tomatoes, chopped (leave out excess water)
- 1 chipotle pepper, minced
- 2 tbsp. chopped cilantro
- 1/2 tbsp. lime juice
- Large bowl
- Tin foil
- Baking pan

Step 1
Pre-heat your oven to 425 degrees F.

Step 2
Combine beans, onion, corn, olive oil, jalapeno, salt and pepper in the bowl. Mix well.

Once combined, place over tin foil in a baking pan and place on top oven rack for 15 minutes.

Step 4
Allow it to cool, then return it to the bowl and add tomatoes, chipotle pepper, cilantro, lime juice and stir.

Step 5
Served with toasted wheat crackers as a healthy alternative to chips.
