How to Make Aztec Black Bean Salsa

Who doesn't love a good salsa? How about a salsa that is packed full of delicious, healthy vegetables? I have created this recipe for Aztec Black Bean Salsa that is perfect for a day of watching football, a picnic--just about any gathering, really. It's a healthy alternative to those salsas you purchase at the store. I bet that if you offer it instead of the store-bought, you'll be praised! Here is how to whip up this tasty crowd pleaser.

Instructions

Things You'll Need:

  • 1 cup black beans
  • 1 cup chopped red onion (large)
  • 1.5 cups kernels of corn (fresh or 10 oz. frozen will work)
  • 1 tbsp. olive oil
  • 1/2 jalapeno, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup pear/grape tomatoes, chopped (leave out excess water)
  • 1 chipotle pepper, minced
  • 2 tbsp. chopped cilantro
  • 1/2 tbsp. lime juice
  • Large bowl
  • Tin foil
  • Baking pan
  1. Step 1

    Pre-heat your oven to 425 degrees F.

  2. Step 2

    Combine beans, onion, corn, olive oil, jalapeno, salt and pepper in the bowl. Mix well.

  3. Step 3

    Once combined, place over tin foil in a baking pan and place on top oven rack for 15 minutes.

  4. Step 4

    Allow it to cool, then return it to the bowl and add tomatoes, chipotle pepper, cilantro, lime juice and stir.

  5. Step 5

    Served with toasted wheat crackers as a healthy alternative to chips.

Tips & Warnings
  • As with any recipe, this is best when prepared with fresh ingredients--it's not too spicy, but full of flavor
