Things You'll Need:
- 1lb. fresh or frozen prawns
- 2 tablespoons olive oil
- 2 onions, chopped
- 4 cloves garlic, minced
- 1-1/2 tablespoon ginger, minced
- 1 cup vegetable broth
- 1 tablespoon Thai green curry paste
- 1 tablespoon Thai chili pepper powder
- 2 tablespoons fresh lemon juice
- 1/2 cup coconut milk
- 1 bunch green onions, chopped
- 1/4 cup toasted walnuts
- 1/4 cup finely chopped cilantro leaves

Step 1
Combine curry paste, Thai chili pepper and lemon juice in a bowl.

Wash, clean, peel and devein the prawns. Cool the prawns in the fridge for 15 minutes to tenderize the meat (optional). If using frozen one, thaw overnight in the fridge.

Add the olive oil in a frying pan or wok over high heat for 15-20 seconds. Turn heat down to medium. Add onions stir until softened. Add ginger and garlic; keep stirring for 1 minute. Add vegetable broth.

Turn heat down to medium-low. Add in coconut milk, the prawns, and the mixture made in Step 1. Cover the frying pan with a lid. Let the content cook until the prawns are opaque. Add in the green onions, stirring and cook for 30 seconds.

Remove the pan from heat and place the stir-fried to a large plate. Garnish with walnuts and cilantro. Serve hot.
