Need to use ripe bananas before they spoil? Tired of baking banana bread or banana nut muffins with those leftover bananas? For a change, why not try making a banana cake?

This banana cake can be served for brunch with coffee or tea or for dessert after a meal. Enjoy with friends and family, anytime of the year.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1/2 cup butter or margarine
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 1/4 cups sifted flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed bananas (approximately 2-3 bananas)
  • 1 teaspoon vanilla
  • 1/4 cup milk
  • loaf pan or round pan

  1. Step 1

    Preheat oven to 350 degrees. Wash hands. Grease and flour loaf pan or round baking pan. Use non-stick spray or butter to grease pan.

  2. Step 2

    Cream butter (use "cream" setting on mixer).

  3. Step 3

    Add sugar gradually.

    Beat in eggs, one at a time, beating well after each addition.

  5. Step 5

    In a separate mixing bowl, sift together remaining dry ingredients (flour, baking powder, baking soda, salt).

  6. Step 6

    Add to butter, sugar, and egg mixture, alternating with mashed bananas. Beat after each addition.

  7. Step 7

    Add milk and vanilla, beating after each addition until smooth.

  8. Step 8

    Pour cake batter into greased and floured loaf pan or round pan and bake at 350 degrees for approximately 30 minutes.

Tips & Warnings
  • Test cake with toothpick to ensure it is finished before removing from oven.
