Things You'll Need:
- 2 cans 20 oz. chunk pineapple
- 6 Tablespoons flour
- 1 cup sugar
- 1 stick butter
- 1 sleeve of Ritz crackers
- 1 casserole dish
- 6 Tablespoons pineapple juice
- 2 cups shredded sharp cheddar cheese

Step 1
Pineapple chunks nicely drainedStart off by draining the cans of pineapple...squeeze and drain as much juice as possible...Reserve at least 6 Tablespoons of this juice...drink the rest.

Ah....the casserole dish. Where would the Methodists be today without it?Combine the flour, sugar and pineapple juice and stir into a nicely smooth mixture. Fold in pineapple chunks and shredded cheese. Place entire mixture in your favorite medium sized casserole dish...oblong, square, round....don't matter.

Everyone's favorite round cracker....but any brand will do...honestTake a sleeve of Ritz crackers (or any reasonable facsimile round cracker) and crush it while in the sleeve package....don't worry, it should all stay inside until you are done crushing, grinding, squeezing...then, open one end and pour out the fine cracker dust evenly over the pineapple mixture.

Nothing to do with the casserole....I just love this lampIn your microwave, melt one stick of butter (or margarine) and drizzle the entire fluid over the cracker crumbs in a zig-zag configuration.

top with your favorite holiday garnishPlace casserole in pre-heated oven at 350 degrees and bake 30 minutes.
