This quick guide is a simple way to substitute ingredients while cooking. Ever run out butter, whole milk or cake flour? No need to worry or start all over that holiday meal can be saved in a pinch!

Instructions

Things You'll Need:

  • To be stuck without the right ingredient!
  1. Step 1

    1 whole egg for baking or thickening can be substituted with 2 egg yolks.

  2. Step 2

    1 cup of margarine or butter for baking can be substituted with 7/8 cup of vegetable oil plus 1/2 sp. of salt.

  3. Step 3

    1 ounce of unsweetened chocolate can be substituted with 3 tbsp. of cocoa plus 1 tbsp. of fat

  4. Step 4

    1 tsp of double acting baking powder can be substituted with a 1/4 tsp of baking soda plus 1/2 cup of sour milk or buttermilk

  5. Step 5

    1 cup of buttermilk or sourmilk for baking can be substituted with 1 cup of whole milk plus 1 tbsp of vinegar or lemon juice
    You can also substitute with 1 cup of whole milk plus 1 3/4 tsp of cream of tartar

  6. Step 6

    1 cup of whole milk can be substituted with 1/2 cup of evaporated milk plus 1/2 cup of water or...
    1 cup of nonfat dry or skim milk plus 2 1/2 tsps of butter or margarine

  7. Step 7

    1 cup of skim milk can be substituted with 1 cup of reconstituted nonfat dry milk.

  8. Step 8

    1 tablespoon of flour for thickening can be substituted with 1/2 tbsp of cornstarch or 2 teaspoons of quick-cooking tapioca

  9. Step 9

    1 cup of cake flour for baking can be substituted with 7/8 cup of all purpose flour.

Tips & Warnings
  • tsp = teaspoon
  • tsps = teaspoons
  • tbsp = tablespoon
  • tbsps = tablespoons
  • 7/8 cup equals 1 level cup minus 2 tablespoons
