How to make a lemon meringue pie.
easy and delicious.

Instructions

Things You'll Need:

  • INGREDIENCE
  • filling
  • 1 1/4 cups sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups water
  • 3 eggs separted
  • zest from 1 lemon
  • 1/3 cup lemon juice
  • 1 tablespoon butter
  • 1 baked cooled pie shell
  1. Step 1

    FILLING
    preheat oven 350 degrees.
    combine sugar, flour, salt & water in sauce pan.
    over medium heat bring to boil stiring constantly.
    boil for 1 minute.
    remove from heat.
    slightly beat egg yolks in bowl.
    mix one-third of boiled mixture with the egg yolks (slowly not to cook the eggs)put back into the sauce pan with the remaining mixture.
    cook 1 minute stiring constantly.
    remove from heat & add butter, lemon zest & lemon juice - mix thoroughly.
    pour into pre baked cooled pie crust.
    Make meringue to add to the top.

  2. Step 2

    MERINGUE
    3 egg whites
    6 tablespoons sugar
    1/2 teaspoon vanilla extract
    1/4 teaspoon cream of tartar

  3. Step 3

    Beat egg whites until soft peaks form.
    add cream of tartar , gradualy add sugar.
    beat until stiff peaks form.
    mix in vanilla.

    Pour eggwhites on top of pie.

    Bake for 10 minutes or until meringue is golden brown.
    Have a friend over and ENJOY

on 12/14/2008 One of my favorites, and you're so right about tempering to the eggs, scrambling them just doesn't make for a yummy lemon custard LOL... I've been known to uh, "forget" the meringue and double up the lemon filling! I just love lemon!! :)
