How to Make Reduced Fat Noodle Kugel for the Holidays

The holidays are upon us, and one very important one is Hanukkah. (For those of you who don’t know what Hanukkah is, Hanukkah is a Jewish Holiday that lasts for eight days, during which time gifts are given and traditional foods served.) One of the traditional foods enjoyed on Hanukkah is noodle kugel.

Besides noodle kugel, Hanukkah also brings with it the tendency to overeat and consume unhealthy amounts of fat -- something traditional noodle kugel has lots of. For this reason, you may want to pass up this sweet treat. Well, you don’t have to because you can still enjoy noodle kugel while limiting your fat and cholesterol consumption. The recipe below will give you step-by-step instructions on how to make delicious reduced fat noodle kugel.

Things You'll Need:

  • ½ pound wide eggless noodles
  • ¼ pound of melted cholesterol improving margarine
  • 1 pound of whipped light cottage cheese
  • 1 cup of light sour cream
  • ½ cup of sugar
  • Liquid eggs, equivalent to 2 real eggs
  • ¾ cup of golden raisins
  • A sprinkle of cinnamon
  • 1 teaspoon of vanilla extract
  • A large pot
  • A colander
  • A large baking pan
  1. Step 1

    Preheat your oven at 350 degrees.

  2. Step 2

    Cook the eggless noodles in boiling water for nine minutes and drain in colander.

  3. Step 3

    Rinse cooked eggless noodles under cold water while they are still in the colander.

  4. Step 4

    Make sure all of the excess water is drained from the eggless noodles, then put the noodles back into the empty pot.

  5. Step 5

    Grease the baking pan with a little of the melted margarine and set the pan aside.

  6. Step 6

    Add the remaining melted margarine to the pot of noodles and mix well.

  7. Step 7

    Add the remaining ingredients and mix until all is combined evenly.

  8. Step 8

    Pour the whole mixture into the greased baking pan and bake uncovered for about 40 minutes.

  9. Step 9

    After the 40 minutes, cover the pan with tin foil and put the pan back in the oven to bake for an additional 18 minutes.

  10. Step 10

    When done, remove from oven and remove the tin foil.

  11. Step 11

    Allow the noodle kugel to cool before cutting it into serving size portions.

  12. Step 12

    Serve and enjoy.
