Start a new tradition with this easy, beautiful breakfast casserole on Christmas morning. The addition of green and red peppers gives this casserole a festive holiday look. This can be put together the night before and baked in the morning so that you can relax and enjoy opening presents.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1.5 pounds of diced potatoes (or 1 large bag frozen hashbrowns)
  • 1/4 cup margarine
  • 12 eggs
  • small onion, chopped
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red pepper
  • 2 cups diced tomatoes (or 15 ounce can, drained well)
  • 3 cups shredded cheddar cheese
  • 1/2 pound meat (diced ham, crumbled bacon or sausage)
  • salt and pepper, to taste
  • 9 x13 baking dish
  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Melt margarine in the bottom of a 9 x 13 baking dish.

  3. Step 3

    Spread the diced potatoes in the bottom of the baking dish. If you are using frozen hash browns there is no need to thaw first.

  4. Step 4

    Spread chopped onion and tomato over the potatoes and sprinkle with salt and pepper, to taste.

  5. Step 5

    Spread your choice of meat over the vegetables. You can use either 1/2 pound cubed ham, 1/2 pound crumbled bacon or 1/2 pound crumbled sausage. If you are preparing the night before stop at this point and cover the dish and place in the refrigerator.

  6. Step 6

    Beat 12 eggs and pour over the meat.

  7. Step 7

    Sprinkle the red and green pepper over the eggs. Do not skimp on the peppers. This is what gives the casserole its Christmas color.

  8. Step 8

    Bake in 350 degree oven for approximately 45 minutes.

  9. Step 9

    Remove from oven and sprinkle with cheese. Return to oven and bake for another 10-15 minutes until cheese gets bubbly.

  10. Step 10

    Allow casserole to cool for 5-10 minutes before cutting into squares and serving.

Tips & Warnings
  • For added ease use frozen hash browns, canned diced tomatoes (well drained) and frozen onion and green pepper mix.

on 12/25/2008 I have made a similar dish myself for years but this article has provided me with some alternate ingredients. To change up your recipe, you might try monterey jack cheese instead of cheddar.
