This sweet potato recipe is actually a revision of the microwave chocolate cake recipe (pictured to the left). But instead of chocolate cake, this recipe will make a delicious and quick sweet potato coffee cake muffin. You can use leftover sweet potato. In less than 5 minutes you can enjoy a warm homemade sweet potato muffin with your coffee or tea! Does this Spark an idea?

Things You'll Need

  • Soup mug (microwave safe)
  • 1 egg
  • 1/4 cup cooked sweet potato (mashed)
  • 4 tablespoons brown sugar
  • 4 tablespoons flour
  • 3 tablespoons milk
  • 3 tablespoons oil
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon

Instructions

      Mix together the egg and sweet potato in the mug. Mash well. (Pumpkin can be substituted for sweet potato).

      Add the remaining ingredients, and blend well.

      Place in the microwave and cook for about 3 1/2 minutes. You will watch the muffin rise high over the mug lid, and then it will drop down when the microwave turns off. If too moist, cook a few seconds longer, or if too dry, cook a few seconds less the next time.

      Remove from microwave, and slip muffin from cup, onto plate. Serving for two. Top with whipped cream.

Tips & Warnings

  • Try adding walnuts or pecans to the batter.
