This roasted lamb recipe is so easy and delicious. My guests were so impressed by this dish that they demanded the recipe during dinner!

Difficulty: Easy
Instructions

Things You'll Need:

  • Cajun Seasoning
  • Onions and carrots
  • Leg of Lamb
  • Roasting pot, or pan
  • Butter
  • Corn Starch
  1. Step 1

This recipe is for a small 4 pound leg of lamb. For a leg of lamb bigger than 6 pounds, double everything.

  2. Step 2

Preheat your oven to 350. Cut up 4 onions into quarters and 5 carrots into three pieces each. Throw the onions and carrots into your roasting pan along with the leg of lamb. It may look like a lot of onions, but they melt down.

  3. Step 3

Add to the roasting pan the following: 1/2 cup oil, two teaspoons salt, and a good three tablespoons of Cajun seasoning. This a great spice mix to invest in, almost all supermarkets have it.

  4. Step 4

Mix everything with your hands, It's best to use gloves for this. After everything is thoroughly mixed add 3 cups of water to the bottom of the pan.

  5. Step 5

For every pound of lamb you have, allow for 25 minutes. The last ten minutes put lamb under the broiler to get that nice crispy brown.

  6. Step 6

Remove the lamb and arrange the vegetables around it. In a pan melt 1/4 cup butter (or half a stick). Add to it the liquid from the bottom of the pan and two tablespoons of corn starch. Make sure to mix very quickly so that the corn starch does not clump.

  7. Step 7

Pour the gravy on top of the lamb, or put drizzle on the side. Enjoy!
