Oyster stuffing is an old fashioned Southern favorite for Thanksgiving and Christmas. It seems to be quite an acquired taste, as most people who ate it as children love it -and many others can't stand it!

Difficulty: Moderate
Instructions

Things You'll Need:

  • One can of oysters
  • One loaf of day old french bread
  • One celery stalk
  • One half onion
  • Chicken stock
  • One bunch of parsley
  • One half stick of butter
  • Sage
  • Salt
  • Pepper
  • Poultry Seasoning
  1. Step 1

Heat butter in a large sauce pan over medium heat. Add chopped celery and onion. Stir occasionally.

  2. Step 2

Rip bread into chunks about 1" by 1/2" or bigger. Place in a large bowl. Set aside.

  3. Step 3

Snip parsley into tiny flakes. Once onions have started to turn translucent, add parsley into pan.

  4. Step 4

When parsley is wilted, turn heat to low, add oysters. Heat just until oysters are warm -try not to break them up.

  5. Step 5

Pour warm pan mixture over ripped bread. Stir gently until well mixed. Add chicken stock as needed, you want it moist, but not wet.

  6. Step 6

Pour mixture into a baking pan. Place into a preheated 350 degree oven. Bake for one hour. Be careful when removing from oven -it is very hot!

Tips & Warnings
  • If you intend to bake the stuffing inside the turkey, keep it a little drier since the turkey juice will add natural moisture.
