Things You'll Need:
- Vanilla ice cream frozen
- Gingersnap cookies
- Cookie tray or similar tray
- Plastic zipper food storage bags

Step 1
Purchase gingersnaps cookies. These are small in diameter, usually about 1-1/2" to 2" in diameter.

Count out an even number of gingersnaps cookies as you will be using 2 cookies for each ice cream sandwich.

Step 3
Lay out 12 gingersnaps cookies on a cookie sheet or tray. Lay the cookies down so that the curved side is towards the cookie tray and the flat side is up.

Step 4
Using frozen vanilla ice cream, scoop about 2 tablespoons of the ice cream onto each gingersnap cookie base. Work quickly so the ice cream does not melt.

Step 5
Place a second gingersnaps cookie on top of each scoop of ice cream and press down to make a sandwich.

Step 6
Place the ice cream sandwich cookies into plastic zipper food storage bags and place in the freezer so that the ice cream can once again harden.

Step 7
When ready to serve, take the gingersnaps ice cream sandwiches out of the freezer a few minutes ahead of time. This will allow the cookie to thaw out. Don't thaw too long or the ice cream will melt!
