I am a Caterer and Personal Chef in the Rocky Mountains of Colorado. I have worked in restaurants and kitchens for years and I have tons of great, easy ideas. I also write for a local paper and my job is to create quick, yet delicious recipes that anyone can make! So leave that can of beef stew on the shelf. You and your family can have a home made meal in no time! Using a few store bought and pre-made items, a wholesome meal is just a few minutes away. Serves 4

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 lb beef sirloin
  • 1 can of potatoes
  • 1 can of carrots
  • 1 can diced tomatoes w/ garlic, celery and onions
  • or Italian Style diced tomatoes
  • 1/2 canned or frozen pies
  • 1/4 cup seasoned flour
  • 1 cup beef or chicken stock
  • savory spice and garlic to taste
  • 1 pkg boil in bag rice
  1. Step 1

Chop the sirloin into bite sized cubes. Coat the meat in the seasoned flour and sear in a pot or skillet with oil.

  2. Step 2

Once the meat has browned, add the tomatoes and bring to a boil. Meanwhile, cut the potatoes into bite sized chunks. Add the potatoes and veggies to the pot. Once it comes to a boil add the chicken broth and let simmer 20-25 minutes. Add garlic and savory seasoning to taste.

  3. Step 3

The stew is finished when the potatoes are soft and the broth has reduced to a thick sauce. Boil the rice according to the directions on the box. Serve stew over the rice for a hearty meal.

Tips & Warnings
  • You can use chopped stew meat from the grocery store but you will have to cook it a lot longer. If you use stew meat, don't add the vegetables until the last 30 minutes of cooking. Let the meat simmer in the broth and tomatoes for about 2 1/2 hours. Then add the veggies and let simmer another 30 minutes.
  • A 30 minute veggie stew can be made. Just leave out the beef and add more veggies. Use veggie broth. I like to add corn and zuchinni. Serve over brown rice of rice pilaf for extra flavor!
