These easy gingerbread cookies only require a few simple ingredients to make. Their softer texture and rich taste will leave you wanting more!

Instructions

Things You'll Need:

  • 1 (6 oz) pkg sugar free, fat free butterscotch pudding mix (instant ok)
  • 3/4 cup butter or margarine
  • 3/4 cup brown sugar
  • 1 egg
  • 2 1/4 cup flour
  • 1 tsp baking soda
  • 1 tbsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1 tube
  • new
  • Betty Crocker decorating frosting, white
  1. Step 1

    In bowl, cream butterscotch pudding, brown sugar and butter in bowl. Once creamed, add egg and blend well. Add in flour, baking soda, ginger, and cinnamon. Mix until well blended. Place mixed dough in refrigerator and allow to chill for one hour.

  2. Step 2

    Roll the dough on a floured surface until 1/4 inch thickness. Cut with gingerbread cookie cutter. Place cookies on greased cookie sheets or on parchment paper. Bake in preheated 350 degree oven for 9-11 minutes. Remove from the oven and place on wired rack to cool.

  3. Step 3

    Decorate cookies with tube of frosting, sprinkles, candies, or other decorations. Makes approximately 16 cookies. Each cookie has approximately 185 calories and 9 grams of fat (if traditional butter is used). Using light butter or margarine will make the cookies less fat and less calories.

Tips & Warnings
  • These cookies will have a gingerbread taste, but not the traditional one you may be used too. Many relate the taste of these gingerbread cookies to a sugar cookie texture with a gingerbread flavor. These are delicious cookies and a recipe your family is sure to enjoy!
