How to Make Roasted Orange & Pineapple Cranberry Sauce

Its that time of the year again! Time for friends and family and lots of food! There a much better options than that gelatinous chunk of cranberry sauce that comes in the can and usually make its way all of our dinner tables. A beautiful Holiday Meal should never have to sit next to cold canned cranberry sauce. Try this recipe to impress your guests.

Instructions

Things You'll Need:

  • 2 cups Frozen cranberries
  • 1 Naval orange
  • 1 cup Canned pineapple chunks
  • 1/2 cup Pineapple Juice
  • 1/2 cup Orange Juice
  • 1/4 cup Brown Sugar
  • 1 tsp Lemon Zest
  1. Step 1

    Cut orange into segments by cutting in between the chewy white part of the orange, reserve any extra juice. Chop the orange segments and place on a greased sheet tray. Place a cup of canned pineapple chunks on the pan with the oranges and cover with foil.

  2. Step 2

    Roast in a 350 degree oven until tender and slightly brown. Usually takes 20-30 minutes.

  3. Step 3

    When the oranges and pineapplea are done, remove them from the oven and place in a sauce pan. Add the cranberries, sugar and juices and reduce to a thick sauce. Garnish with orange zest.

Tips & Warnings
  • This Cranberry Sauce is so good! I served it at a party I catered recently and my clients thought it was a dip! They had some cracked pepper and olive oil crackers that went great with the sweetness of th cranberry sauce.
