Mmmmm, Does your sweet tooth have an ache for cake? These are simple steps for making a two layered delicious cake. The asterisk are extras. If you want to take on a challenge or are not a beginner you can follow the extra steps that follow the asterisk. Ok, here goes.

Bake a cake according to the package, splitting it between two different pans. Make sure you butter and flour the pan you are using well. **If you want the cake to be super fluffy, here's the secret: Take the egg whites of the eggs required for the cake and whisk them (with kitchen aid, electric mixer, or by hand). Whisk them until they are nice and fluffy then add them back to the cake mix, gently folding the egg whites in until you can't see white anymore. Make sure everything is clean and you are mixing just egg whites, if there is a bit of egg yolk in there, it won't fluff nicely**

Once the cake is ready let it cool. For all you impatient bakers (and I'm one of them) Let the cake cool and rest, it DOES make a huge difference. ** Waiting a whole 24 hours is extra, but a well rested cake will make your life easier**

Here comes the fun part. What do you put in the middle? A lot of people put icing in the middle, but the cake comes out way too sweet! Here's another secret: Pudding mix. There are tons of flavors of pudding. Pistachio and vanilla are my favorites, pick whatever sounds delicious. You want Pudding mix, not the ready to eat stuff. Make the pudding according to the packaged directions and put half the liquid (usually milk) that it calls for. Once the pudding is ready, set it aside and level your cake. Leveling your cake just means making the top of it flat. A great knife to use is a bread knife, the flat long one with the ugly sharp teeth at the end. ** Cake levelers are sold in art stores, like Michaels or Pearls, if you want to go the extra mile**

Now for the frosting. This part is fun. Make sure the frosting is room temperature and not cold. I've tried a lot of frosting and the best so far is whipped frosting with half the sugar in it. Don't worry about how the frosting looks when you start smearing it on. **If you want a clean smooth look, dip a clean knife in water and smooth the frosting out.** If you want that ruffled look, take the back of a spoon and do little half turns all over.**

Decoration. Visit that baking isle in your supermarket. There are tons of stuff you can decorate a cake with. Colored Icing, Stuff you can write with, Nuts, Coconut, sprinkles. ** If you really want that cake to look professional, visit an art store. All art stores I've ever been to had a baking isle with stuff you can't find in your supermarket. Edible flower making stuff, cake levelers, frosting coloring, frosting tips**
