Things You'll Need:
- 10 lbs. chicken (use any piece you wish.
- Season salt
- Large Onion
- Bell Pepper (if desired)
- 8 Large Eggs
- Lite Mayo (brand desired)
- Fresh Garlic
- 1 Teaspoon Sugar
- 1/2 stick margarine cut in thick slices

Step 1
Preheat oven to 375 degrees. Boil eggs at this time as well.

While oven is preheating, wash and season chicken to desired taste. I have specific seasonings I like, but it is really up to the taste bud of the individual I always say.

Chop 1/2 onion and 1/2 bell pepper, and fresh garlic into small pieces.

*Take veggie mixture, along with margerine pieces, 1/2 cup of water and add to pan with seasoned chicken.

Place roaster pan in oven and let chicken roast for 1 1/2 hour.

While chicken is roasting, peel boiled eggs under cold running water. This helps the skin remove easier. Chop eggs and set aside.

Once chicken is done baking, remove chicken from broth and let cool. Broth can be cooled and stored and used for making soup or flavored rice in another meal.

After chicken is cooled, remove skin. Remove meat from bone and finely chop.

Add chicken, eggs, relish, rest of finely chopped onion and bell pepper (if desired), mayo to desired moistness, salt, pepper, sugar (if desired) and mix well.

Serve with crackers.
