How to Make Cracklin’ Cornbread Stuffing

Cracklin' cornbread is a soul food dish that is also a favorite of many southerners. It's not hard to prepare and gives your stuffing an extra "crunch". Cracklin' is fried pork skins, only it is not light and fluffy like the bags you buy in the store. Cracklin' pork skin is fried to a crisp with a little fat on it; so if you're trying to eat healthy, this recipe is not for you. If you are trying to put on some weight or don't mind exercising, try adding this cracklin' cornbread stuffing to your holiday feast.

Instructions

Things You'll Need:

  • 2 c Self-rising corn meal
  • 1/2 c. Self-rising flour
  • 1 tsp Sugar
  • 2 Eggs
  • 1 1/2 c. Carnation milk
  • 1-stick Margarine (or butter)
  • 1 c. Cracklings
  • 1 can Chicken broth
  • 1/3 cup Green Bell pepper
  • 1/3 cup Onions (diced)
  • Black Pepper (to taste)
  1. Step 1

    Combine corn meal, flour, 1 egg, sugar, milk and butter in a large bowl and mix well.

  2. Step 2

    Stir in cracklings and then pour the crackling cornbread mixture into a greased 9-inch cake pan.

  3. Step 3

    Place in preheated oven and cook at 400 degree Fahrenheit until golden brown.

  4. Step 4

    Remove cooked cracklin' cornbread from oven and transfer to a large bowl.

  5. Step 5

    Add onions, peppers, and chicken broth and stir until completely moistened.

  6. Step 6

    Pour into greased 9-inch cake pan or stuff the hen or turkey with the cracklin’ cornbread stuffing.

  7. Step 7

    Bake your cracklin' cornbread stuffing at 400 degrees Fahrenheit until golden brown.
