How to Make Crock Pot Chicken Casserole

This is an easy recipe for crock pot chicken casserole. This will make 6 - 8 servings.

Instructions

Things You'll Need:

  • 4 skinless, boneless chicken breasts
  • 1 tsp. paprika
  • 1 tsp. garlic pepper
  • 16 oz. sour cream
  • 10 3/4 oz. can of cream of mushroom soup (undiluted)
  • 8 oz. cream cheese
  • 1 c. chicken broth (instant boullion can be used)
  • 16 oz. frozen broccoli
  • 1 T. cornstarch
  • 1/4 c. water
  • 1 sleeve Ritz crackers
  1. Step 1

    Rub paprika and garlic pepper on the chicken breasts. Place chicken breasts in bottom of crock pot.

  2. Step 2

    Combine cream of mushroom soup, chicken broth, and sour cream. Pour on top of chicken.

  3. Step 3

    Add frozen broccoli.

  4. Step 4

    Cut cream cheese into 6 - 8 chunks and place on top of soup mixture and broccoli.

  5. Step 5

    Cover crock pot and cook on low 6 - 8 hours.

  6. Step 6

    Turn crock pot off and ladle out the soup mixture into a medium sauce pot.

  7. Step 7

    In a small bowl, combine cornstarch with 1/4 cup of cold water. Stir to dissolve. Add this to the soup mixture in the sauce pot. Stirring constantly, bring to a boil.

  8. Step 8

    Using a fork, shred chicken (it should shred easily).

  9. Step 9

    Add thickened soup mixture back to the crock pot. (This will thicken as it cools down.) Mix in crushed Ritz crackers and serve.

Tips & Warnings
  • Make sure you constantly stir the soup after adding the cornstarch to prevent it from burning.
  • The cornstarch is used to thicken the soup. If you don't have cornstarch, you can use flour.
  • Try substituting other cream soups for a twist on this recipe.
